Maker's Spotlight: Tabal Chocolate

Dan Bieser of Tabal Chocolate has been making artisan chocolate since 2012. In April of this year, Tabal opened their very first retail store at 7515 Harwood Ave, Wauwatosa, WI. They are organic certified, kosher certified, gluten-free, vegan, soy free, and made from bean to bar in small batches using stone grinders.

Fun fact: their logo comes from the shape of the hand cut grooves on the stone grinding wheels. These grooves allow the cacao liquor to flow smoothly off the stone as it grinds.

Tabal's Nicaragua Ka bar is made with only two ingredients: enliven cacao and sugar. The word "ka" comes from the Mayan language meaning "two." Their bar has a subtle caramel flavor with hints of nuttiness. Taste one!
